I have about a bazillion things to do this afternoon and wasn't going to blog at all, but then realized I could share with you this fabulous recipe for the cupcakes I'm making today (for six of the most incredible young women I know.)
My favorite thing about this recipe, other than the fact that is is very delicious, is that it is pretty much as simple as a cake mix. Dump dry ingredients in mixer, dump wet ingredients on top, mix and bake!
Chocolate Cupcakes
Combine in bowl of stand mixer:
- 2 cups sugar
- 1 3/4 cups all purpose flour
- 1 cup cocoa
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1 cup brewed black coffee
- 1/2 cup safflower oil (canola oil can be substituted in a pinch)
- 1 tsp vanilla
Scoop or pour into 24 muffin cups and bake @ 350 degrees for 16-20 minutes until a toothpick inserted in the center comes out clean.

Can you taste the coffee in the cupcakes?
ReplyDeleteNo, you can't taste the coffee at all. Coffee just amplifies the chocolate taste. You could use water if you don't want the caffeine.

Wow I like the simplicity...I was thinking, it would be easy enough to premix the dry ingredients in ziplocks and have your own "mix" ready. You could write the rest of the directions on the outside with a sharpie.
ReplyDeleteJust tried this recipe - delicious! You're right, the coffee flavour enhances the chocolate. I substituted yogurt for buttermilk (because that's what I had)... very moist and just sweet enough. I made them for my daughter's 6th birthday, she was thrilled.

DeleteAmazing...absolutely amazing! I didn't want to stop eating them! And they were so easy. Some people feel that scratch cakes can be dense compared to box mixes; not so with this recipe. They were super moist and fluffy. I'll never buy a mix again.
