{SavourTheSeason} Day 11: Pumpkin Spice Oatmeal



I don't want to complicate this simple autumn breakfast with a big fancy explanation.  It's warm, it's comforting, it's pumpkin-y, and it's goooood.  Do try it.

In a large pot, combine:
  • 2 cups of milk
  • 2 cups of water
  • 1 cup of pumpkin puree
  • 1 1/2 tsp of pumpkin pie spice
  • a small splash of vanilla (who can be bothered to measure vanilla before 8am?)
  • 2 cups of rolled or "large flake" oats
 Bring everything to a simmer and cook, stirring often, until the liquid is absorbed and desired consistency is achieved.  Top with some brown sugar or pure maple syrup and a splash of milk.  So simple you can make it before you've had your morning coffee.

    2. Our go to oatmeal is actually copping fresh apples into the oats, applesauce would probably be similar to that!That's always tasty!

  8. I made it this morning, and it was easy and delicious! I halved the recipe (cause there is 3 of us not 7) and it was perfect! Finally an oatmeal the hubbs and toddler enjoy! Thank you!

  9. I made this the other day and it was great! It fed 6 of us plus 2 servings as leftovers. The oatmeal fans liked it and the non-fans didn't - no surprise there. I pinned it as a winner and will make it again. Thanks.
