I don't want to complicate this simple autumn breakfast with a big fancy explanation. It's warm, it's comforting, it's pumpkin-y, and it's goooood. Do try it.
In a large pot, combine:
- 2 cups of milk
- 2 cups of water
- 1 cup of pumpkin puree
- 1 1/2 tsp of pumpkin pie spice
- a small splash of vanilla (who can be bothered to measure vanilla before 8am?)
- 2 cups of rolled or "large flake" oats

You could try it with applesauce instead and let us all know how it turns out :)
DeleteOur go to oatmeal is actually copping fresh apples into the oats, applesauce would probably be similar to that! That's always tasty!

banana is good too
DeleteThis looks delicious. I was just thinking last night of what I could do with my leftover pumpkin from last weekend. And my 14 month old loves oatmeal so this will be great for him too. Thanks!

Yum!
ReplyDeleteI just happened to be making oatmeal this morning and saw your post before I got started. Making it now! It smells delicious!
ReplyDeleteHow many people does that amount serve? I'm guessing that's for your whole family cause it seems like a lot of oatmeal!
ReplyDeleteHi Elle! Yes, it feeds our whole family....just barely!
DeleteOh my goodness, I cannot wait to try this!
ReplyDeleteWhat a good idea! Sounds so yummy!
ReplyDeleteI made it this morning, and it was easy and delicious! I halved the recipe (cause there is 3 of us not 7) and it was perfect! Finally an oatmeal the hubbs and toddler enjoy! Thank you!
ReplyDeleteI made this the other day and it was great! It fed 6 of us plus 2 servings as leftovers. The oatmeal fans liked it and the non-fans didn't - no surprise there. I pinned it as a winner and will make it again. Thanks.
